The spirit has been resting in French Oak casks for an astounding 57 years, meaning it is truly a once in a lifetime bottle. This long aging process in the cellars of the Fillioux estate have produced some incredibly rich flavours, of full dried fruits, dark honey, old sherry, overripe bananas and flowers. This is a spirit that rewards patience with a glissando of aroma, flavour, and a finish that lasts and lasts. Comes complete with a beautiful wooden presentation box, and would make the ideal gift for any spirit lover. Note that due to the extreme scarcity of stock, this is a 350ml bottling. About the producer: Jean Fillioux is simply one of the very best when it comes to Cognac. The family owns a fantastic 63 acres vineyard in the heart of the Grande Champagne area since 1880. The aromas that have lost freshness and intensity tend towards almonds, kernels and the famous "rancio" so characteristic of very very old cognacs. This taste is difficult to describe. It is found in old beeswax furniture or old walnut oils; it only appears after a very long aging. It can also be found in Porto, Sherry, Maury. Such an aroma is inimitable: only time does its work. Stored for many years in small ten hectolitres casks placed in a small cellar on clay before entering Grosperrin cellars, where it remained in 350 litre barrels.  Very amber colour. Dense and complete nose, spices, rancio, prunes, dried flowers. Delicate and oily palate, light notes of undergrowth, bitter chocolate. Beautiful development, with a lot of elegance. The finish is generous and rich, well balanced, typical of a beautiful Grande Champagne. A very beautiful Cognac, as demanding as it is accessible.

This very old cognac comes from a joint-possession which was established at the death of the winegrower many years ago. His widow and children manage the inheritance with prudence and patience, in memory of this man. One of the grandsons took over the estate and it is now flourishing as one of the most important in the Borderies region. The Grandfather’s stock is however managed separately, and kept in a cellar in the centre of the village of Burie, located in the heart of the Borderies. We became the owners of this exceptional cognac through a certified broker. It has since then aged in our cellar in Saintes, on the bank of the Charente river, where a small water reduction was carried out over 2 years ago. Old gold colour, amber highlights. The first floral nose, typical of the Borderies expresses itself clearly, with notes of violet sweets (they do exist, in France at least!), dried flowers, spicy roses. The second nose is more profound, denser, and we distinguish an elegant rancio, but without too much woodiness, induced by the oxidation of the fat contained in the alcohol, which time has made noble. The spices are more intense, cigar boxes, liquorice, more “mature”. The attack is frank, mineral on the palate, we are immediately touched by the quality of the cognac. It develops in a powerful and yet contained way, the texture reveals itself as being quite oily. The long finish takes us back to the aromas perceived on the nose. Very elegant, a beautiful Borderies.

This very old cognac comes from the commune of Réparsac, a commune located in the heart of Fins Bois. It was produced by a winegrower who was also a nurseryman, and who had developed activities complementary to his profession as a producer. Very old when I met him, this lot was the last he had. He had kept it as long as possible, in memory of his first harvest. Tasting Notes: The nose of fresh mushrooms, dried flowers, blackcurrant bud. We immediately guess that this cognac has aged in a wet cellar, due to the mushy notes that emerge from it. But despite this cellar side, the aromas are noble, this cognac is astonishing, we never tire of the nose. On the palate, the attack is soft, rich and creamy. The aromas on the nose are confirmed on the palate, blackcurrant, wet dog, complex finish, both vegetal and smoky at the same time. A very old Fins Bois, rare.

Alba is the result of Couvreur's passion for whiskies and wines and the encounter with Angélique and Quentin Bourse (from the Sot de l'Ange estate located in Azay-le-Rideau in the Loire Valley, France) who gave them one of their freshly emptied Chenin Blanc cask. Matured for 17 years in Fino and 5 additional years in Chenin, Alba is a very subtle, pure and delicate spirit that shows that whiskies' flavors can be long and complex without peat expression. Alba boasts a golden light color and offers aromas of white wine, honey and subtle oak nuances. It is round, mellow and deep in the mouth with beautiful energy. Chenin grape flavors on the finish with a touch of vanilla and white flower. A complex and long aftertaste. The label has a drop shape, just like the Sot de l'Ange label. This precious moment inspired this combination of spirits, pouring into a shimmering glass decanter fused to a night-colored ceramic base.  Clase Azul Tequila Gold is an incomparable tequila joven, a blend that combines Clase Azul Tequila Plata with a special reposado tequila matured in French oak casks and an Extra Añejo aged in American whiskey casks and finished in sherry casks. TASTING NOTES Colour: Soft amber with golden sparkles. Body: Medium body. Aroma: Agave syrup, green apple, orange peel, fresh fig, raisins, light note of almond and walnut.
