All the Calvados in our blend “Réserve Ancestrale“ have been produced following the strict criteria of the label "Calvados Pays d'Auge".

 

Apple Varieties:  Cider apples from Pays d’Auge.
Our apple trees yield about twenty varieties of cider apples : sweet, bitter-sweet, bitter and acidulous. Examples of varieties : Bisquet, Binet Rouge, Noel des Champs, Egyptia, etc. Apples we buy are strictly selected so as to press only high quality fruits.


Soil: Pays d’Auge area.
Hilly and green area located in Normandy, Pays d'Auge has a soil mainly composed of flint clay covered with silt.


Distillation: Double.
Our Calvados are still distilled over a wood fire in three little pot stills to maintain traditional and artisanal methods of production.


Ageing: Oak barrels.
"Doyen d'Âge" blend matures in very old oak barrels that can reach 2000 litrescapacity and more, stored in the cellar built by Pierre Groult (1830-1918).


Age: Unknown.
This great blend of extra old Calvados has been elaborated by several generations of Cellar-Masters. Certainly a flagship of our range!


Colour: Red reflections.


Flavour: Flavours of cooked apples, with vanilla notes.


Taste: Very round and fruity.


How to drink:
It Perfect as a digestive, just plain and at room temperature. Also to be tasted accompanying dark chocolate…
